Tempeh Mendoan / Fried Tempeh in Batter

Tempeh Mendoan / Fried Tempeh in batter is a very popular Indonesian snack and a delicious street food. It is very easy to make and tastes yummy - enak sekali!

Tempeh is made from fermented soy bean and is available chilled or frozen. A crispy batter coats the tempeh, leading to a fantastic contrast of soft & crispy textures when you eat. I fully recommend trying this snack!

Tempeh Mendoan is also a popular snack for people following vegetarian or vegan diets.

 

Ingredients :

  • 100g plain flour
  • 30g rice flour
  • 0.5 tea spoon of salt
  • 1 tea spoon of seasoning powder (vegetable, or any flavour you prefer -  chicken, etc)
  • 1 pinch of white pepper
  • 1 teaspoon of coriander powder
  • 0.5 teaspoon of turmeric powder
  • 2 spring onions
  • 0.5 stalk celery with leaf (to taste)
  • 2 cloves of garlic
  • 180ml water

 

Method:

Prepare the batter...

  1. Roughly chop the spring onions and celery and add to a mixing bowl.
  2. Finely chop the cloves of garlic and add to the mixing bowl.
  3. Measure the plain flour and rice flour and add to the mixing bowl.
  4. Add the salt, seasoning powder and a pinch of white pepper and the coriander and turmeric powder to the mixing bowl.
  5. Mix the ingredients together.
  6. Add the water to the mixing bowl and mix all ingredients together. Vary the amount of water if needed to produce a medium/fluid consistency batter.

 

Prepare the tempeh...

  1. Tempeh is typically available in blocks approx. 400g in size. Chop the tempeh in half and then chop in half again to produce two blocks around 6cm long.
  2. Slice along the length of the tempeh to give large, thin slices - there is no wrong or right size.
  3. Add some oil to a frying pan and heat on medium to high heat to prepare to fry the tempeh mendoan.
  4. Dip a few pieces of tempeh into the batter mixture, making sure each side is well coated.
  5. Transfer the battered tempeh pieces to the frying pan and fry for a few minutes until golden and crispy, turning the tempeh occasionally to make sure each side is cooked.
  6. The tempeh should still be soft on the inside, but crispy on the outside.
  7. Once cooked, remove from the pan and allow to cool a little on some kitchen roll.

 

Now Enjoy...

Tempeh Mendoan can be enjoyed on its own, but the experience is improved if you eat with a little fresh chilli or make a dipping sauce.

A very simple and tasty dipping sauce can be made by mixing chopped fresh chillies with some sweet soy sauce (kecap manis).

Or... if you already have some sambal available, simply mix a teaspoon of sambal with some kecap manis. Here I have used Sambal Naknan and Bango kecap manis - delicious!
